Hot-Cold Apples and Blueberries with Maple

- Blueberries (Bilberry or Blueberry)
- 1 egg yolk
- Calvados
Method
  • Cook the apples in a little butter and maple syrup. Transfer to a heat-proof plate.
  • Add the blueberries and grate some maple sugar over top.
  • Pour on some 35% cream mixed with an egg yolk and a little Calvados. 
  • Place under the broiler until nicely browned.
  • Serve with vanilla ice cream.
