"Already thirty years have passed at Saint-Bonnet-le-Froid, the village where Michèle and I decided to settle," says Régis Marcon. "I was 23, very young - too young - naive, but brave. I was taking over from my mother who was tired, and she handed over to me a little restaurant, a few rooms, a bistro and a gas station. At the start, business was difficult: slow during the week, and intense on the weekend with families.
"Very quickly, I wanted to evolve in my work and in 1985 some tourist guides started talking about us. My wife and I understood that an opportunity was presenting itself, to provide cuisine that harmonized with our environment in this village ambiance. In 2000, we decided to pursue our dreams by building this restaurant, which we opened in 2005."
To celebrate 30 years in the business, Régis and Michèle Marcon have just opened a Certified European Ecolabel Hotel, the architecture of which is reminiscent of farms of the high plateau (main house, stable, barn): a style that is austere on the outside, but warm and inviting on the inside. A stay in one of the pretty rooms overlooking the Cévennes, welcomed by Michèle's lovely smile, and you'll be ready to discover the inventive cuisine of this affable epicurian.
