On the main square of one of France’s most attractive villages, three generations of the Isabal family, from father to son, have been perpetuating a cuisine with the gentle undertones of the Basque country.
The Hôtel Ithurria was once a staging post for pilgrims bound for the resting place of the apostle Saint James at Santiago del Compostela. Today, distinctive furniture and family mementos rub shoulders with the taste and flavours of fresh products from the Basque terroir.
Xavier Isabal works like an alchemist to perfect every one of his recipes, having trained under such masters as Lenôtre, Ducasse and Jean Brouilly. Xavier has a a particular fondness for vegetables, which are picked with the changing seasons from a 1500 square metre vegetable garden.
He invites all lovers of good food to come and discover this authentic and light cuisine. A pure moment of pleasure!
