Along one of the routes to the ancient pilgrimage site of Santiago de Compostela, a stone's throw from the vast beaches of the Landes, the Basque country and the vineyards of Bordeaux, this former coaching inn carries on a certain idea of family tradition. The rooms with their modern décor and furnishings look out onto a large tranquil light-filled park. The cuisine of Jean Coussau presents the seasonal scents and flavors of this bountiful region, a harmonious blend of tastes and aromas that follow the rhythm of fish from the sea or the Adour river, poultry, duck and foie gras from the Landes, beef from Chalosse, asparagus from Magescq, game, berries and flavorful mushrooms from the local woods. He interprets and transforms them as his imagination dictates, in such dishes as Aquitaine caviar and corn blini with cream, or his hot duck foie gras with grapes…
In partnership with his brother Jacques, who oversees the wine cellar and dining room, Jean Coussau invites us to share in a true gastronomic celebration as experienced in France's Southwest. We salute the fervor of the Coussaus as they ardently preserve age-old skills that are being lost over time.
