Fall is a wonderful season for cooks because, aside from the products that are available all year round, there are also mushrooms and pumpkins! "It's a magical time. The atmosphere, the temperature, the unique feel of autumn… you can see it and smell it. On weekends, I start feeling the urge to share relaxed meals with friends, taking things to their simplest expression. There is also new wine, which in French we call "vin bourru" or "gruff" wine: fresh grape juice just before it begins to sparkle with fermentation. Drink it with some chestnuts - it's outstanding!
