All about black rice > From the market to your plate
Black rice is a medium grain rice with a nutty flavor and tender texture. Once cooked, it takes on a dark purple color.
Tip and hints
- Unlike most varieties of rice, black rice does not cook well in an automatic rice cooker
- Black rice can stain some containers, including porous ceramics and synthetic ware.
You'll find several varieties available on the market:
- Riso venere - a rice produced in northern Italy on the Po plain
- Black Japonica rice from the USA
Away from humidity
Rinse the rice in clear water and drain.
If you don't want sticky rice, rinse the rice while rubbing it between your hands. Drain and repeat to remove the surface starch.
Allow two parts water to one part rice.
Place the water and rice in a saucepan. Bring to a boil. Cover. Reduce the heat to minimum and let cook. The cooking time is generally longer than for white rice; allow 35 minutes.
Remove from the heat. Let stand 15 minutes.
Fluff the rice with a fork if you have opted for non-sticky rice.
