Preparing
Remove the leaves, thorns and stringy parts of the cardoon.
Rub with a cloth to remove the fine downy layer covering the cardoon.
Cut into short lengths, placing them as they are cut into water to which some lemon juice has been added so that they do not darken;
Cooking
Cook in boiling water to which salt and lemon juice have been added or in 1/2 milk 1/2 water.
