Chicory is one of those little extras that delight cooks. It's their secret weapon to add complexity, depth and a slight bitterness to cookies and cakes. It also plays a role in terms of texture: its rich inulin content adds softness even when used in small amounts. Do a test: add two small spoonfuls to brioche dough. The flavor will be imperceptible, but the crumb will be tender as a cloud. So consider adding one or two spoonfuls when making cakes, gingerbread or shortbread. Your pastry will be even more tender, and your pancakes even lighter.
