Once it is harvested, the chicory is washed to eliminate any foreign bodies, then cut into thin strips about 7-8 mm in thickness. Since chicory root is 76% water, it is dried to reduce the moisture level to 10%, guaranteeing good conservation. The dried slices go through a chiller before being shipped to the warehouse (before roasting).
