Chicory is sown in the spring, mainly in northern France, in silty soil. Planting usually occurs between March 25 and April 10, depending on the season.
The growing cycle is about 180 days until the plant reaches maturity. At this point, it is rich in inulin.
In order to respect the 6-month growing cycle, the chicory roots are pulled up in the fall. Harvest lasts for a month to six weeks, depending on the amount to be harvested.
