Buying

When buying cod, don’t base your selection on the skin color, since it varies according to environment.

Opt for thick cuts. When the fillet or pavé is too thin, the fish doesn’t stand up well to cooking and flakes apart.

 

Cooking

Fresh cod is incredibly versatile. It can be poached, baked, fried, or grilled and served with or without sauce.
