Two in one
Few plants can boast of being both herb (cilantro – the leaves) and spice (coriander – the seeds).
During World War II, when many raw materials were rationed, "sugar drops" were created: coriander seeds covered in white or pink sugar. Pretty girls on floats threw handfuls into the crowds at carnival time. This was the origin of confetti and heralded coriander’s triumphant return.
While coriander seed has long been used in cooking and liquor-making worldwide, using the plant’s fresh leaves as a seasoning is a relatively recent phenomenon in the West. The Chinese consume large amounts of cilantro since it is believed to bring immortality. The seeds are a traditional seasoning in Thai cuisine and Indian curries.
