Known as "the queen of dates" it is one of the star products of Algerian agriculture. Algeria is the second largest producer of this variety in the world, after Tunisia.
The region for growing Deglet-Nour centers around the town of Tolga, near Biskra. It's there that the skill of local growers has brought this legendary fruit to the perfection it is known for.
Dates are usually eaten in their natural state, or can be stuffed with ground almonds, pistachios, hazelnuts or even fresh butter, accompanied by a glass of mint tea. Algerian pastries are a subtle blend of Mediterranean flavors and aromas. They reflect numerous influences that make up the country's cultural richness. Cinnamon, orange flower water, almonds and honey are the principal ingredients in Algerian sweets. When the date is added to these flavors, it becomes a pure delight.
When it comes to Algerian cuisine, the country is divided in half. In the north, dates are not used in savory dishes, but in the southern Saharan region, they are added in small quantities to the red sauce for couscous, chakhchoukha (a speciality of Biskra, very spicy and delicious) and other typical southern dishes.
