Sold fresh, whole or in slices. Cooked in bloc, terrine, etc. There are several different qualities. Some melt too quickly. For cooked products, avoid the thick yellow edges. They’re selling you fat at the same price as liver. When buying foie gras in cans or glass containers, read the label to find out the liver content. You might be surprised!

Fresh foie gras is generally sold vacuum-packed: see the expiry date on the packaging. Store in the coldest part of the refrigerator. Once removed from its packaging, use within 24 hours, since it becomes highly perishable and tends to absorb every odor. Longer than 24 hours, cover with milk or season it.
