All about Grana Padano cheese > From the market to your table
The rind of Grana Padano DOP is hard, smooth and thick, dark yellow or golden yellow in color. The semi-fat curd is finely granulated and is straw yellow in color, with a strong, but never sharp, flavor.
The Grana made in the Province of Trento does not contain lysozyme and is branded with the Trentingrana mark.
Grana Padano should be kept in the lower part of the refrigerator. Any prolonged exposure to air and temperatures above 4° C may hasten ripening and cause mold to form.
It's best to replace the packaging with parchment paper and then a layer of aluminum foil and to store the cheese in an airtight container.
Grana Padano will keep for 3-4 months.
Grana Padano DOP can be used, depending on its length of aging, as a table cheese or as an ingredient in the preparation of dishes in the Italian gastronomic tradition.
Shaved Grana Padano is great for salads, hors d'oeuvre and beef carpaccio. It's delicious sprinkled onto risotto.
When grated, it is used to enhance pasta and gratinéed dishes.
