Lamb is not lean meat – which is why it’s so flavorful. And yet it’s not as fatty as you might think, since 100 g (3 1/2 oz.) of cooked meat contains fewer than 250 calories, with shoulder in the 300+ range. It’s a good source of protein, which provides a rich and balanced supply of essential amino acids that cannot be synthesized by our body and so have to come from our diet. What’s more, it contains vitamins B3 and B12, iron and zinc.
In traditional Chinese medicine, lamb is considered to be a food that warms the body.
