All about molasses > The Worldwide gourmet
Widely used in English cooking, a tradition dating back to the days of the colonies, molasses is also found in the Scottish recipes, in Irish wedding cakes and West Indian rum-based cocktails.
In times past in Quebec, molasses was known as the habitant's sugar, or the poor man's sugar. It was even used as a spread on buttered bread for breakfast or as a snack for children. Molasses was used to sweeten oatmeal porridge and cookies and to make molasses candies.
