In its most basic form, mustard is made by mixing the ground or chopped mustard seeds of the mustard plant with a liquid – be it a vinegar, wine or even beer and fruit juice. Mustard’s flavours and spice come from enzymes that develop into mustard oil once the seeds have been broken down. When mixed with liquid, the strong flavours can be stabilized and varying in strength.
