A close cousin of Camembert in its texture and flavor, Neufchâtel is preferred by some slightly more aged with a stronger flavor and darker gold rind. Its bloomy crust hides a smooth creamy curd with a delicate but assertive taste.
Available Formats
100 g square, brick or cylinder.
200 g heart and double cylinder.
600 g large heart.
When produced on farms, Neufchâtel is sold as is on straw or wrapped, while when made in a cheese dairy it is sold in a box or wrapped in paper.
The ideal is to buy the cheese when it is perfectly ready to eat and store it in a cool, humid and well-ventilated place.
The refrigerator vegetable crisper can be used for storage if the cheese is wrapped properly.
