Shanghai noodles are usually sold uncooked, but you can also find them cooked, in which case they are often labelled "with oil," which considerably ups the lipid count. 

Shanghai noodles sold in large grocery stores are made with egg whites while artisanal noodles are made with yolks. You can recognize the difference by the color of the uncooked noodles.

Therefore, it's imporant to read the label and choose according to your diet.
