Sweet potato doesn't refer simply to a big orange root vegetable. Today there are over 500 varieties, with the color of the flesh varying from creamy white to yellow or orange, or even a playful purple!

Among the four American varieties most often exported to Canada, we find the same nutritional and culinary qualities among the orange-fleshed varieties, but the Murasaki has a completely different profile. 

Covington
Varieties 1

Rose coloured skin, deep orange flesh
High in beta-carotene, Vitamin A, C & E
Excellent for baking, steamed, pureed or frozen

Beauregard
Varieties 2

Copper coloured skin, bright orange flesh
High in beta-carotene, Vitamin A, C & E
Excellent for baking, steamed, pureed or frozen

Evangeline
Varieties 3

Rose skin colour, deep orange flesh
High in beta-carotene, Vitamin A, C & E
Excellent for baking, steamed, pureed or frozen

Murasaki (sometimes referred to as Batata or Oriental)
Varieties 4

Dark purple skin, creamy white flesh
High in Anthocyanin, Vitamin C and dietary fibre, low in in beta-carotene
Distinctive nutty flavour, good for baking, boiling or mashing
