All about sweet potato > Varieties
Sweet potato doesn't refer simply to a big orange root vegetable. Today there are over 500 varieties, with the color of the flesh varying from creamy white to yellow or orange, or even a playful purple!
Among the four American varieties most often exported to Canada, we find the same nutritional and culinary qualities among the orange-fleshed varieties, but the Murasaki has a completely different profile.
