Storing
Fruits can be stored in a cool place for months and used later in the winter season. Thus this gourd is called Bi Dao in Vietnamese and Tong Qwa in Chinese, meaning "Winter Melon". The unopened fruits can be kept fresh for a long time in a cool place but the stem should be left on to prevent dehydration.
Once cut, wrap the squash and refrigerate. The flesh shall be used in cooking within a few days.
Can be frozen easily if peeled and cooked first.
