Japanese rice wine

 

Sake is a traditional rice wine drunk during a Japanese meal. It is often served very warm in a fine porcelaine bottle and poured out in small quantities into tiny porcelain cups so that it retains its warmth. 

Sake has numerous qualities since it diminishes the intensity of salty food, masks odors and balances the flavors of fish.    

Because of its high acidity, sake is used in marinades to tenderize meat.
