Chipolata
A small pork sausage native to Mexico, that is highly seasoned with various spices, such as chives, cloves, coriander, mace, onion, thyme, and chili peppers. Typically made into lengths that are 1 to 3 inches long, the traditional chipolata sausages contain coarsely ground pork however, variations of this sausage may also be made with a combination of beef and pork.
How to buy
The smaller sausages are most often served as a cocktail weiner for appetizers while the larger sausage is typically served as a breakfast sausage.
How to enjoy
A variety of food dishes can also be made by mixing the sausage in with other ingredients.
