Brouère
Origin: Lorraine
Made by the Fromagerie de l’Hermitage in Bulgnéville, in France’s Vosges region, Brouère is 43 cm in diameter and weighs 12 kg, making it the smallest of “aging” cheeses. It is “sculpted” by being shaped in wooden molds with designs carved into them by an artisan sculptor. Ripening lasts 4 to 7 months.
