Product and production
- made from partly-skimmed milk
- pasteurized milk is cooked into a thick mass that forms the curd; it is then wrapped in cheesecloth, placed into molds, pressed and turned so that it takes on a flattened shape with a convex heel before being immersed in brine for 4-5 days. It is then dried on boards.
