Product and production

  • made from partly-skimmed milk
  • pasteurized milk is cooked into a thick mass that forms the curd; it is then wrapped in cheesecloth, placed into molds, pressed and turned so that it takes on a flattened shape with a convex heel before being immersed in brine for 4-5 days. It is then dried on boards. 


  • sold in orange wheels, 10-15 kg each 
  • soft pale curd with numerous holes 
  • hard rind 
  • ripened for 6-8 weeks
  • slightly nutty flavor
