This is a cheese for sophisticated palates. The soft, smooth cheese has a fresh hazelnut and mushroom flavour that intensifies with time. During aging the rind becomes light orange. Mi-Careme is a perfect dessert cheese.
Named after...
Mi-Careme is named after a traditional Acadian holiday similar to Mardi Gras, a holiday that the French settlers originally brought to Quebec. Île-aux-Grues is one of only four places in Canada that still celebrate the holiday.
