Raw or Unpasteurized Cream
This is our grandparents' cream, old-fashioned farm cream.
Its fat content is generally higher than that of pasteurized products. When available, "raw" or "unpasteurized" must be specified on the label.
Since it hasn't undergone any specific heat treatment, it is more perishable. It must be refrigerated at 6° C and consumed within 7 days of the packaging date.
Restaurateurs appreciate it for its whipping ability which permit it to be beaten until very light and airy.
