Chub
General information
Chub is one of the largest French white fishes and can weigh up to 3 kg. Chub belongs to the carp family. The adult fish, depending on variety, has a round or square head, a wide mouth and thick pale lips. The back is greenish brown and the belly white, verging on yellow.
In the kitchen
It's not widely used in cooking because it has so many bones that it is nicknamed the "pin cushion." It is found on the seasonal market as fillets and, in some countries like Italy, dried.
