General Information
Grown in Turkey and Corsica since Roman times, this fruit of the citron tree, a relative of the lemon, is enormous. It has a bumpy skin with not very acidic pulp.
It is used in jams and liqueurs (cédratine) but it is its candied peel that has charmed all the Middle East.
