Tripe dishes are traditional specialties of numerous countries. Tripe is the lining of the cow's stomach, which has four main parts:
- Reticulum (honeycomb stomach)
- Abomasum (true or rennet stomach)
- Omasum (third stomach)
- Rumen (first stomach)
