Rosewater is used in MIddle Eastern pastries and desserts.
It is also used to perfume the water in fingerbowls.
The petals are used to make jams, jellies, etc.

(gulab) In India, rose petal powder is used for its flavor as well as for its properties in marinades. This tradition is still very much alive in dishes of the Lucknowi Court, particularly in the delicate kormas. Indian rose petals are small with a double row of petals and their flavor is much stronger than western varieties.
