Szechuan pepper
General Information
- Origin: China
- Etymology: commonly used in the Szechuan region of China.
- Rutaceae family
Even though this spice is commonly grouped with the pepper family, it is in fact a berry. Its unaggressive flavor is rich and suggests a delicious mixture of strongly-flavored spices.
Culinary File
- the dark outer covering is milled off, since it is tough and very bitter
- use Szechuan pepper in rice, to flavor poultry, meat or noodles
