Flageolet Bean
This little bean is pale green, thin, flat and not starchy.
Unlike other beans, the entire plant has to be pulled up and left to dry in the field. Once the plant has lost its leaves the pods are collected.
Pairing
- it loves olive oil or butter with a touch of garlic and bacon bits
- a traditional accompaniment to leg of lamb in French cooking
