Minutina or Staghorn
Minutina is not a lettuce, but a member of the plantain family.
The leaves are long, shiny green, tender and pleasantly flavored. The leaves are laciniate.
Cooking
Minutina is highly appreciated in Italy where it is known as erba stella or "star grass." It is used in salads.
Jeremy Fox, chef of Ubuntu, a trendy restaurant in the Napa Valley, serves minutina with beets, fork-mashed avocado, pistachio oil and ruby grapefruit segments with a grinding of black pepper.
