Summer truffle
Gathered between May and September, sometimes later. The outer covering is dark brown with large pyramidical bumps, ridged in both directions.
The interior has fine, ramefied marbling on a whitish background, turning grayish as it matures.
Fine, light woodsy scent. Mild wild mushroom flavor.
Chef's notes
With Jean-Michel Lorain, La Côte St-Jacques
A cousin of the Burgundy truffle, this variety offers little interest. It is often used, combined with truffle peelings sold in jars, to increase volume and decrease cost. This is generally the variety found in pâtés.
