Sweet Agaric or Fragrant Agaric
Fragrant agaric mushrooms are found among dead leaves in the woods. Slender, meaty, elastic, convex, often with a crinkled edge, this mushroom has an appealing anise-like flavor.
"There are some wild mushrooms, the smallest hint of which can transfigure a dish. I'm not talking about truffles, but about the fragrant agaric, which is a valuable condiment. A quarter of this little mushroom is enough to add a strong flavor to langoustines in broth, to which I add very little else before serving. I might add a touch of tarragon, which pairs well with the anise flavor of the agaric: the latter adds a rich flavor that is perfect for this dish."
