Chef's Note

Give your guacamole an extra kick with a splash of tequila.The delectable tequila marinade yields a flavourful makes a great Tequila Guacamole, for guests at any fiesta.

Daring
Add a green apple cut in small dices to bring some crunchy texture and accentuate the Tequila Sauza blue Silver taste.

Substitute
If you don't like coriander, try with oregano

Ingredients
For 8 servings

- 4 ripe avocados
- 60 ml / 4 Tbsp. tequila
- 60 ml / 4 Tbsp. jalapeño pepper, seeded
- 1 small shallot
- 1 clove of garlic
- 1 lime (juice only)
- coriander to taste
- 15 ml / 1 Tbsp. olive oil
- salt

Accompaniment
- chips or tostadas

Method
  1. Finely chop the jalapeño pepper, the shallot and the garlic clove.
  2. Mash the avocado in a bowl and stir in the lime juice with a fork until creamy.
  3. Fold in the shallots, garlic, oregano, jalapeño and season.
  4. Mix in the tequila cover with cling wrap and refrigerate for about 20 minutes.
  5. Serve with chips or on tostadas.
