Braised Chicory Recipe

Chef's Note
Braised chicory makes an excellent accompaniment to grilled meats.
Ingredients
- 1 bunch escarole Chicory
- Chicken stock
- Onion
- Bacon, cut into small pieces
- Salt and pepper
- Madeira (optional)
For another twist
- Add some roasted pine nuts
- Or top with shaved parmesan
Method
- Remove the tough bottom ends of the chicory; wash it and tie it up;
- blanch in boiling water for 10 minutes; drain;
- in a saucepan, sauté the sliced onion with the bacon bits; add the chicory and a good ladleful of stock; simmer until completely cooked, about 45 minutes;
- season; add a splash of Madeira at the end, if desired.
