Broccoli alla Romana

For 4 servings

- 1 kg (2 1/4 lb.) Broccoli florets
- 4 tbsp. olive oil
- 1 clove of garlic, finely chopped
- 375 ml (1 1/2 cup) white wine
- Salt and freshly ground pepper
  1. heat the oil in a skillet; remove from the heat and sauté the garlic for 30 seconds;
  2. reduce the heat; add the broccoli to the pan and sauté until glossy;
  3. add the wine and season with salt and pepper; cook 5 minutes longer; cover and continue cooking for several minutes until the broccoli is tender;
  4. drain the broccoli and place in a serving dish, reserving the liquid;
  5. boil down the liquid until slightly reduced; pour over the broccoli and serve hot.
