Vanilla Frosting or buttercream

Chef's Note

To replace the egg whites, you can buy meringue powder in specialty shops. Use 6 Tbsp. combined with 12 Tbsp. water.

The preparation time may seem long, but it's necessary to give the frosting its lightness.

Ingredients
- 6 egg whites
- 680 g (1 1/2 lb., about 6 cups) icing sugar
- 525 g (1 lb. 2 oz.) butter or 300 g (10 oz.) butter + 225 g (8 oz.) vegetable shortening
- vanilla extract to taste
Method
  1. Place the egg whites and icing sugar in the bowl of an electric mixer and mix for 2 minutes.
  2. Add the shortening and butter and beat for 20 minutes.
