- 4 Savoy Cabbage leaves
- 10 ml (2 tsp.) clarified unsalted butter
- Celery salt
Method
  1. Poach the cabbage leaves for 3 minutes in boiling salted water.
  2. Drain on paper towels. Brush lightly with butter. Season.
  3. Place on a rack and dry in an 80° C (175° F) oven for 1 to 2 hours until crisp. Let cool.
