Ingredients
- French fries
- Curd cheese
Sauce
- 1 Tbsp. butter
- 1 small onion, diced
- 125 ml Chic Choc spiced rum + 1 Tbsp.
- 250 ml homemade or prepared demi-glace
- 2 Tbsp. 35% cream
- Salt & pepper to taste
Method
- In a saucepan, melt the butter and sauté the onion.
- Add the Chic Choc spiced rum (125 ml) and bring to a boil; reduce by half.
- Add the demi-glace and heat to a simmer.
- Add the cream and simmer gently until the sauce reaches the desired consistency.
- Season with salt and pepper to taste.
- Add the tablespoon of Chic Choc spiced rum.
- Strain to obtain a smooth sauce.
Pour the sauce over the fries and top with the curd cheese.
