Ingredients
Ingredients for 20 pieces
- 250 g (9 oz.) chicken Livers
- 125 g (4 oz.) butter, at room temperature
- 50 ml (3 tbsp.) white wine
- 10 ml (2 tsp.) Port
- Salt and pepper
- 1 round loaf of white bread (about 250 g / 9 oz.)
- 30 g (1 oz.) blueberries
- A few lemon balm leaves
Method
- Sauté the chicken livers for 1-2 minutes in 15 g (1 tbsp.) butter; add the wine and Port. Remove the livers and cool; reduce the liquid.
- Mash the livers, blend in the remaining butter and reduced pan juices. Season, blend well and refrigerate for 30 minutes.
- Slice the bread thinly and toast it. Spread the chicken liver mixture on the toast and garnish with blueberries and lemon balm leaves.
