Chicken Liver Canapés

Ingredients
Ingredients for 20 pieces
- 250 g (9 oz.) chicken Livers
- 125 g (4 oz.) butter, at room temperature
- 50 ml (3 tbsp.) white wine
- 10 ml (2 tsp.) Port
- Salt and pepper
- 1 round loaf of white bread (about 250 g / 9 oz.)
- 30 g (1 oz.) blueberries
- A few lemon balm leaves
Method
  1. Sauté the chicken livers for 1-2 minutes in 15 g (1 tbsp.) butter; add the wine and Port. Remove the livers and cool; reduce the liquid.
  2. Mash the livers, blend in the remaining butter and reduced pan juices. Season, blend well and refrigerate for 30 minutes.
  3. Slice the bread thinly and toast it. Spread the chicken liver mixture on the toast and garnish with blueberries and lemon balm leaves.
