Chicory Yogurt Cake

Chef's Note

Here's a delicious recipe for yogurt cake given a new spin with chicory to celebrate Leroux Chicory's 165th birthday. You can't have a birthday party without a cake, and we wanted you to share in it!

Ingredients
For a cake that will serve up to 10 people

- We've used an individual yogurt container as a measure to make things easier. One container = 125 ml.

- 1 container plain yogurt
- 250 g / 2 containers flour
- 200 g / 2 containers sugar
- 2 tsp. plain soluble organic chicory
- 2 eggs
- 60 ml / ½ container oil
- 1 packet vanilla sugar
- 1 tsp. baking powder
- Lemon juice (optional)
Method

Step 1
If you make this recipe without a food processor, follow the order of ingredients and mix after each addition.

Preheat the oven to 180° C/350° F.

Step 2
Place the yogurt, eggs, sugar, flour, baking powder and vanilla sugar into the food processor bowl and mix. Add the oil and mix again. Finally, add the plain soluble organic chicory and mix.

Step 3
Butter a pan (unless using a silicone one). Pour the batter into the pan.

Step 4
Bake for 25 minutes. At the end of this time, raise the oven temperature to 190° C/375° F and bake 10 minutes longer. Test for doneness.

Step 5
Let cool slightly and unmold.
