Chocolate with Blueberries

Chef's Note

A specialty that has made the reputation of the Mistassini Trappist Fathers' chocolate shop on Lac St. Jean.

- 500 ml (2 cups) small blueberries
- 225 g (8 oz.) semisweet, 70% dark or couverture chocolate
  1. Melt the chocolate in a bowl set over simmering water.
  2. Add the blueberries.
  3. Stir gently to coat the berries thoroughly.
  4. Drop large spoonfuls of the mixture onto parchment paper and spread out slightly.
  5. Let cool completely.

You can also spread the mixture out over a sheet of parchment, refrigerate for 30 minutes and break into pieces.
