Chocolate Cake with Fleur de Sel Recipe

Chef's Note
Serve thick slices of the cake at room temperature with crème anglaise.
Ingredients
For 1 cake
- 200 g (7 oz.) chocolate
- 1 knob of unsalted butter
- 2 pinches of fleur de sel
- 150 g (3/4 cup) sugar
- 4 eggs
- 100 g (1 cup) flour
Method
- Slowly melt the chocolate in a double boiler or in the microwave.
- Add the butter and fleur de sel.
- In a bowl, whisk the eggs with the sugar until very light and pale.
- Gradually incorporate the flour, then the chocolate/butter/salt mixture.
- Pour into a buttered and floured loaf pan.
- Bake in a preheated 180° C (350° F) oven for about 30 minutes, checking occasionally. If overcooked, the cake will be dry.
