Ingredients
Ingredients for 8 - 10 servings
- 450 g (1 lb.) semi-sweet dark Chocolate
- 450 g (1 lb.) unsalted butter
- 250 ml (1 cup) milk
- 6 egg yolks
- 125 ml (1/2 cup) sugar
Method
- break chocolate into small pieces and melt gently in a covered bain-marie;
- in a saucepan, bring milk and sugar to a boil; pour the mixture over melted chocolate;
- separate the yolks and whites of 6 eggs; beat the whites until they become light and fluffy;
- incorporate egg yolks to chocolate mixture one by one;
- add egg whites and whisk; add butter and whisk again;
- spoon the mixture into charlotte mould or individual ramekins;
- refrigerate for 2-3 hours.
- warm the charlotte mold in hot water before unmolding;
- garnish with whipped cream and petits fours.
